It was my Dad’s 82nd birthday – keep kicking dad. Â I had the family over to the house for a celebration. Â I wanted to do something a little different but my dad is a meat & potatoes kind of guy. Â So instead of cooking a steak, I wanted to try and recall the Chopped Steak at the International Club in Chicago. Â Does anyone remember the International Club? Â Did anyone ever have their Chopped Steak. Â If so, I would love to hear about your memories.
In its simplest form, this is a dressed up hamburger. Â There is no bun and it is finished off in a wine reduction and I topped this steak with a wine reduction mushroom gravy/syrup. Â The burger is enhanced with sauteed onions and various spices before cooking. Â My father’s meal was made complete with mashed potatoes (adapted from the Pioneer Woman) – the cream cheese makes these potatoes and creamed spinach.
Recipe
Chopped Steak(adapted from Just One Cookbook):
Ingredients:
1/2 large onion
salt &Â ground black pepper
3 lbs each 96% lean and 93% lean ground sirloin
1 egg
4 Tbsp. milk
1/2 cup Panko
1 tbsp. sea salt
Freshly ground black pepper
Oil
1 cup red wine
Sauce
1Tbsp. butter
1/2cup red wine
1/2cup water
1/2cup Ketchup
4TbspWorcestershire sauce
2 – 4 oz packages of mushrooms
Directions:
Finely chop the onion. Add to a saute pan with oil and cook until softened, about 5 mintues. Â Let cool.
Add the meat in the bowl and combine with the egg, milk, Panko, salt and black pepper.  Mix well.
Form into one dozen patties. Toss each patty from one hand to the other hand a few times in order to release air inside the balls. Make oval shape patties and keep in the fridge for at least 30 minutes before cooking so that the meat combines together.  In a 2 large pans (I used an iron skillet for one), heat oil over medium heat and place the patties gently on the pan. Indent the center of each patty with 2 fingers.  Cook the patties about 5 minutes. You want to get a  nice browning.  After you flip, pour red wine and lower heat to medium low heat. Cover and cook for 5 minutes to thoroughly cook the inside of the patties (adjust cooking time depending on thickness).  I needed to cover mine with a top because of their size.  Remove the steaks and turn the heat to high to let the red wine evaporate. Now, combine the liquid sauce ingredients in a bowl.  Add the butter and let it melt.  Add the mushrooms and cook them until reduced.  Next, add the sauce ingredients and mix well.  Lower the heat to medium low and let it simmer for a few minutes until alcohol smell is gone and the sauce begins to thicken a little. When ready to serve, pour over the chopped steak.  Enjoy!
