Chocolate Cookies with Mint Chips

The idea behind this recipe was a care package for my youngest son who went off to college.  As I write these words, I know that the care package is as much for me as it is for him.  For any of you that have sent your kids off to college, you know it is done with mixed emotions.  While you want your kids to grow to be independent, happy individuals, it is truly a new stage of life that you are entering.  As I have written before, it is a struggle that I will continue to share with my readers in the hopes that my journey provides comfort to others, and so that I might gain strength from you.

So the beginning of my care package is these cookies.  The base of the cookie is a chocolate cookies.  I mixed up the chips to provide some fun surprises.  So I will share a second post with the other surprise.

Ingredients (adapted from the Pioneer Woman):

  • 2-1/2 sticks Butter, Softened
  • 2 cups Sugar
  • 2 whole Eggs
  • 3 teaspoons Vanilla Extract
  • 2 cups Flour
  • 3/4 cups Cocoa Powder
  • 1-1/2 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 cups mint chips

Preparation Instructions

Preheat oven to 350°F.

Using a mixer, cream butter and sugar until combined.  Scrape the sides once and then mix again.

Add eggs one at a time, mixing after each addition. Mix in vanilla.

Sift together dry ingredients, then add in batches, roughly 1/3’s, to the mixer, mixing until just combined after each addition.

Cocoa 500

Take off paddle attachment and mix in mint chips by hand.  This is a trick that I have picked up from my daughter. (Who is at the University of Michigan – I forgot about my son now only to be reminded that my daughter is away too).

Using a small ice cream scoop, add scoop portions to baking sheet sprayed with flour cooking spray.

Bake for 9 to 11 minutes or until cookies are barely done – you can press on them and there should be just a little give, not mush.

    My dad loves mint and chocolate, and he would totally eat up a whole batch of these cookies. I’ll have to make him some before I go off to college!

      Your new wife you should say. The mint is for my kids. I am not a huge mint fan but put it with chocolate and you have a winner.
