What is the most iconic cookie? It has to be the Chocolate Chip Cookie. My mother-in-law makes the worlds best chocolate chip cookie. Her secret? Crisco. My sister-in-law makes an amazing chocolate chip cookie. Her secret? Hand mixing. Now, I can say myself that I make a pretty “dam-” good cookie. To me the secret is that the wet ingredients are not runny but sandy like. I know that is not a very good metaphor but it describes the texture and the key to the crunchy cookie of goodness.
I mean, childhood, Americana, is a chocolate chip cookie and a glass of milk. I remember my mom making me chocolate chip cookies. When we go home for Thanksgiving, my mother-in-law has made more than 100 cookies. And let me tell you, they do not last.
- 2 and 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons cornstarch
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
- 3/4 cup light brown sugar, tightly packed
- 1/2 cup granulated sugar
- 1 large egg + 1 egg yolk
- 2 teaspoons vanilla extract
- 1 cup chocolate chunks
- (I split the recipe in half for 2 different uses)
- Mix the flour, baking soda, cornstarch and salt in a large bowl. Set aside.
- Melt the butter in the microwave.
- In a medium bowl, whisk the melted butter, brown sugar, and white sugar together until fully incorporated.
- Whisk in the egg and then the egg yolk into the butter mixture.
- Finish the wet ingredients by whisking in the vanilla.
- Pour the wet ingredients into the dry ingredients and mix together with a rubber spatula. The dough will be very soft, yet thick.
- Next, fold in the chocolate chunks.
- Cover the dough and chill for at least 2 hours - longer is better - overnight is great . Chilling is the key to making this recipe work.
- Take the dough out of the refrigerator and allow to slightly soften at room temperature for 10 minutes.
- Preheat the oven to 325F degrees. Line the baking sheet with parchment paper or silicone baking mats. Set aside.
- Using a small ice cream scoop, scoop out the dough and roll into a ball. (You want the dough to be taller than wide).
- Bake the cookies for 11-12 minutes.
- Allow to cool.
- Serve and enjoy!
