I saw this recipe from Evil Shenanigans, included it in my Friday Five and thought I needed to try this one. Â I knew my Mom would love it and my parents were coming over for dinner. Â As I expand my cooking into baking, there is so much for me to learn and to understand the impact of ingredients. Â I know cream cheese adds a richness to most dishes as well as a creaminess. Â I have used it in my mac ‘n cheese, with some of my enchilada recipes but I do not think I have tried it for dessert (outside of cheesecakes).
Though the recipe looked very appealing, I was wondering if it would be as rich as I expect Chocolate Mousse to be. Â I was not disappointed. Â I added a couple more ounces of bittersweet chocolate than the recipe called for and I believe this created the right balance. Â I also used raspberries because I prefer them to strawberries.
Out of respect for my fellow blogger, I am providing my pic but a link to her blog for the recipe.

No Bake Chocolate Cheesecake Mousse by Evil Shenanigans
My only changes were to use 5 oz of bittersweet chocolate and raspberries instead of strawberries.
