Chicken Cole Slaw Sliders

I love cole slaw and it is so summer.  Cole Slaw is the perfect compliment to many summer recipes.

Chicken Cole Slaw Sliders from Feed Your Soul Too

Now I have to admit, I love a creamy cole slaw.  I am OK with vinegar slaws but nothing beats creamy.  What I sometimes do to modify how much mayo I use is to add Greek fat free yogurt.  You really only need a little mayonnaise to get the flavor you want from a creamy dressing.  I also really like to use both red and green cabbage.  It gives such good color to the slaw or dish.

As a total aside, I frequently by a full head of both the red and green cabbage.  The problem is that is a lot of cabbage.  The good thing about cabbage is it lasts a lot longer than lettuce.  If you have the same issue, when at the grocery store, ask them to cut the heads in half.  They are happy to do that for you. 

One other rant, kind of.  Why is it called RED CABBAGE.  It is actually purple.  What I learned it that the color is a function of the acidity in the soil.  So that explains why it looks purple but it does not explain why we call it red cabbage.

The base of this slider is the chicken.  And the flavor and cooking method is the use of my smoker.  The chicken was spiced with adobo seasoning, lemon pepper and some Spanish paprika to enhance the smoked flavor.  Nothing beats smoke.  The smoke creates such good flavor.

Spicy Mango Chicken Slider

How do you make great meals - look in your fridge and repurpose ingredients. Hence, you end up with this Spicy Mango Chicken Slider.

Ingredients

Smoked Chicken

  • 6 Whole Chicken Breasts
  • 3 Tbsp Adobo Seasoning
  • 2 Tbsp Lemon Pepper
  • 2 Tbsp Spanish Paprika
  • 12 Whole King's Hawaiian Roles

Mango Chutney

  • 12 Slices Mango rough chop
  • 1 Whole Red Pepper small dice
  • 1/4 Cup Orange Juice
  • 1 Medium Onion
  • 1 Cup Sugar
  • 1/2 Cup White Vinegar
  • 1 Clove Garlic minced
  • 1 Whole Red pepper sliced
  • 1/2 Whole Green pepper sliced
  • 1/2 Whole Orange pepper sliced

Instructions

Smoked Chicken

  1. Spice the chicken liberally on each side. Move to smoker and cook on low heat for 60 - 90 minutes. Remove from smoker, let rest. After resting, cut in thirds horizontally for serving.

Mango Chutney and Peppers

  1. Add all ingredients to a sauce pot. Cook on medium heat for 30 - 40 minutes until the ingredients cook down. Let cool. Add the peppers to the pan and cook down until softened - about 5 minutes.

Final Assemblage

  1. Feel free to throw the roles, sliced in half, in a 325 degree oven for 3 - 4 minutes to crisp up. Make the sliders by placing the peppers on the bottom role. Next add the chicken and finish with a healthy helping of the mango chutney. Top with the remaining role.

    Serve and enjoy!
