Chicken Burger with Brie Cheese & Spicy Jam

My son’s girlfriend was coming over for dinner and they requested a cooking lesson.  Two things I knew I needed to do.  One, use a cooking skill they can take with them and have a non-red meat offering.  Burgers are a good basic food to know how to cook.  My son truly wanted beef but my desire to support her eating style won out.  Much to the dismay of my son.  Learn to live with it Sam.

As he knew though, this would not be just a burger.  I designed it to have a few contrasting flavors.  The burger was topped with brie cheese, roasted red peppers and the bun had a red pepper jam.  Yum.

Recipe
Chicken Burgers:
Ingredients:

  • 2 lbs chicken
  • 3 tbsp Lawry’s season salt
  • 3 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tsp each salt & pepper
  • 1/4 roasted red pepper
  • 2 slices brie cheese
  • Red Pepper Jam
  • 2 tbsp olive oil
  • 8 wheat buns
Directions:
Mix all the ingredients up to the roasted red pepper together and form 8 patties with your hands.  I prefer the rustic look as well as the rounder shape.  Heat an iron skillet on medium high and put in 2 tbsp olive oil.  Place the patties in the skillet and press down with the spatula creating more surface area on the skillet surface.  Cook 4 – 5 minutes per side.  When the burgers are flipped, topped with 2 slices of brie cheese and cover with a pan top.  To assemble the sandwich, take a wheat buns, spread the jelly on the bottom bun, place the burger on top and finish by putting the roasted red pepper on the top.  Enjoy!
