Cheese Grits

Grits do not have a lot of love outside of the South.  I have not made them in a while but I think that for those of us Yankees that did not grow up with grits, the key is to add a little flavor.  In this recipe, I simply added some mild cheddar cheese and some paprika.  Pair it with BBQ salmon and we have a great combination and a nice, quick, easy dinner.

Recipe
Cheese Grits:

  1. Boil 2 cups of water with salt
  2. Add 1/2 cup of grits and reduce heat to medium low, stir occasionally 
  3. After grits thicken up, about 5 minutes, add 1/4 cup of grated cheddar cheese and 2 tbsp of paprika and stir until fully incorporated; serve right away.
