I would say this is one of the posts that is pretty basic but it shows me how far my cooking has come. Â I never heard of braising fish. Â I had to braise the fish because I bought it the week before and we ended up freezing it. Â I took it out of the freezer and put it in the fridge. Â When I got home and took it out of the fridge, it was not thawed. Â What to do? Â The only way I could think to cook the fish without waiting all night was to braise it. Â I have only braised cheap cuts of meat and understood how that would make the meat tender. Â But braising a fish. Â What will happen? Â The result was phenomenal – you have to try making this Braised Yellow Tail.
Ingredients:
- 2 Yellow Tail fillets
- salt & pepper to taste
- 1 cup of vegetable broth
- 2 tbsp fish sauce
Directions:
I have to share that I am writing this post probably 2 weeks after I made the dish and I cannot fully remember all the details I put into the recipe. Â I can’t remember if I added more spices or added other liquid to the fish. Â So this is half a recipe. Â I am still sharing it because the recipe is about the cooking method more than the spices. Â I always spice the fish before cooking. Â Since the fish was not thawed, I did not sear it first. Â I put the liquid in first and reduced it a little. Â Then, I put the fish in. Â I cooked the fish on low heat so it could soak up the flavors while it thawed out. Â Now it was not frozen but it was not totally ready for cooking. Â The fish was done when I touched it and it was firm but I could press on it and it bounced back.
