Blackened Salmon Sandwich

For our Superbowl party, we were making a number of meat, or man friendly dishes.  So I needed to make something that would provide all of us, especially the ladies (non-meat eating crowd) an alternative.  We love  blackened salmon.  I had made a Steakhouse rye with this dish in mind.  I added a roasted red pepper sauce and topped this sandwich with arugula.   This is a very nice sandwich – meaty, peppery and sweet.

The salmon was prepared a day ahead as was the roasted red pepper sauce.  So on game day, I needed only to assemble the sandwich on game day and not spend a lot of time cooking.

Recipe
Blackened Salmon Sandwich:
I bought 3 salmon fillets totaling about 3 lbs.  I blackened them in my iron skillet.  I toasted some of the pieces of the steakhouse rye bread and left some un-toasted.  Assemble the sandwich by topping the bottom piece of bread with the roasted red pepper sauce.  Next, place the salmon fillet on top.  Finish by topping with the arugula and the second piece of bread.  Enjoy!
