When I typically fry (which I try not to do too often), I use the traditional trinity of flour, egg wash and bread crumbs. Â I have wanted to use a beer batter. Â When you use beer batter, your result will be a breadier (is that a word), thicker coating but also a very light coating.
The onion rings were part of my birthday dinner for my son. Â My son invited some college friends over and asked for a variety of hot dogs and sausages. Â I was initially like, that is all you want me to cook. Â I accepted the request and needed to work up the sides. Â Hence, the onion rings. Â I also made a corn bread (see post) and I made cole slaw using Greek yogurt.
Recipe
Beer Battered Onion Rings:
- Slice 2 vidalia onions and soak in buttermilk
- Place 1/2 cup of self-rising flour in a bowl
- Combine 1 cup of self-rising flour, 1 tsp of paprika, 1/2 tsp each of garlic powder, onion powder and black pepper, 1/4 tsp cayenne pepper and mix well; then stir in one 12 oz beer
- Heat your fryer to 375 degrees
- Take the onions and dredge in the flour, shake off excess and place in the wet mixture and let excess drip off
- Cook for 2 minutes and then turn each ring over and cook for another minute
- Salt and serve
