I have learned a lot from watching cooking shows and I watch them all the time. Starting dishes in a skillet and finishing in the oven enables you to create a dish with a great exterior, tender center and cooked evenly throughout.

- Turn stove on high and let skillet get real hot. Add oil and then put in fish skin side up.
- Sear for 2 – 3 minutes.
- Turn fish over and smother with BBQ sauce
- Transfer to 325 degree oven for 6 – 7 minutes depending on thickness.
- Plate and serve
