This is the inaugural post for the Salad Bar Monthly. Before I get into the offering, this is a great opportunity to explain how a working man does his blog and participates in some of these cool groups. I got into the office this morning at roughly 7:30am as I usually do. Ate lunch at my desk. Finished two projects as I walked out the door at about 3:30pm. Stop at the grocery store on the way home for ingredients for this recipe and to cook a nice Friday Shabbat dinner for the family. It is now 5:45pm and I have taken my pictures, edited them and am now writing this post. Pretty simple!?
But this is what I love. The fun is in the cooking and the planning. In this case, the Salad Bar Monthly came up with a fruit salad for its first posting. I searched around for some ideas and then walked into the grocery store and picked fruit that we enjoy and that looked good. Top the fruit with avocados and lime juice and you have a very fresh summer salad.
Ingredients:
- 1 Orange
- 2 Plums
- 2 Southern Peaches
- 2 Nectarines
- 1/4 of a Grapefruit
- 1 Avocado
- 2 limes, juice only
Directions:
Slice, quarter and dice all the ingredients. There does not need to be uniformity in this step. I actually think for this presentation, rustic is a better look. Put a variety of the fruit into your serving bowl/cup and top with the avocados. Before serving, squeeze lime juice over top. Enjoy!
