I last posted about my Cajun Style Okra Risotto.  I shared in that post that I had created that recipe to pair with my Blackened Salmon.  It is super easy to make and this post shares How to Make Blackened Salmon.  I created my own blackening seasoning using ten different spices.  We just love salmon in our house.  Salmon is so versatile and holds up to so many different flavors.  My go to spice combination for salmon is salt, pepper and Old Bay seasoning.  This combination is absolutely perfect.

How to Make Blackened Salmon

Every once in a while, though, one just has to mix it up.  I really like blackened fish but do not often cook it.  So I am pretty sure that I saw that I had the bag of frozen okra in the freezer and I wanted to have fish for dinner.  But I have to make a meal that all goes together.  So it was a small leap to come up with the idea of blackening the salmon.  The only tool I need besides by blackening spice was my cast iron skillet.

To create the blackening, one simply creates a spice rub and applies it liberally to the fish.  You can add a little oil if you like to have the spice mixture adhere to the fish.  You can also add butter to the skillet but I do not feel that is necessary and it certainly keeps the dish healthier.  My go to cooking method is to sear the salmon on high heat flesh side down with just a little oil in the cast iron skillet.  Then, flip the salmon skin side down and transfer to a 325 degree oven.  Depending on the thickness of the salmon, it takes about 10 minutes or so in the oven to get a fully cooked and totally tender piece of fish.  I have written about this method before about How To Cook the Perfect Salmon.  “I really have that down” as my wife likes to say.

    Creole Seasoning
  • 2
    Tsp
    Kosher Salt
  • 2
    Tsp
    Oregano Leaves
  • 1
    Tsp
    White Pepper
  • 1

    Black Pepper
  • 2
    Tsp
    Spanish Paprika
  • 1
    Tsp
    Thyme
  • 2
    Tsp
    Garlic Powder
  • 2

    Cayenne Pepper

    Onion Salt
  • 1
    Tbsp
    Canola Oil

Instructions

  1. Heat a cast iron skillet on medium high heat.  Add the oil and warm until simmering.

    Meanwhile, in a bowl, combine all the seasoning ingredients.  Liberally apply to flesh side of salmon.  Add the salmon flesh side down to the skillet.  Cook for 2 minutes.

    Flip to the skin side and move to a 325 degree oven for 12 minutes.  Let rest for 1 – 2 minutes.

    Serve and enjoy!
