Chicken Sandwich Milanese on Focaccia
This Chicken Sandwich Milanese on Focaccia is truly a recipe of leftovers. The chicken milanese was a dinner made for my daughter and my wife. I know this for sure because the chicken is topped with arugula. That is exactly how they like it (MOLLY – the best daughter a father could ever have – is this a good enough shout out to you?). The focaccia bread was part of the Italian dinner made for friends of ours. I will get to those recipes and posts soon I hope.
A sandwich is a work of art. The sandwich does not get enough credit in food blogs and food pictures. It is hard to capture all the layers of flavor in a sandwich. But the key to an amazing sandwich is the quality of each layer. This sandwich begins with a wonderful focaccia bread and the super tasty chicken milanese. The focaccia was baked just right and I made it fairly thin so the sandwich is not too bready. The chicken milanese is perfectly crispy and has a few zingers in the ingredients to give it a little punch.
The sandwich is rounded out by providing great texture and crunch with a hearty romaine lettuce. The final ingredient is a basic mayonnaise. The mayonnaise serves as a perfect dressing to the lettuce and adds the needed moisture for this sandwich. I was lucky to be able to make this sandwich because I often do not have any leftover chicken milanese. So the next time you make some milanese, be sure to make extra so you can try this sandwich.

- 1 Chicken Milanese fillet
- 4″ square cut of focaccia, cut in half horizontally
- Handle of romaine lettuce, rough chopped
- 1 tablespoon mayonnaise
- Pretty darn simple.
- Take the sliced focaccia and lather with the mayonnaise.
- Place the chicken milanese on one-half of the focaccia.
- Top with the lettuce and the second half of the focaccia.
- Dig in!
- Serve and enjoy!
