A friend of my wife and me has been harvesting his vegetable garden at the end of the summer and we are a big beneficiary.  Thanks Tom.  Tomatoes, the hugest (is that a word) cucumbers and red onions.  Don’t need to know too much but one has the makings of a Mediterranean Greek salad.  I added feta later but this recipe and post preceded that addition.  This is such a good salad when you want a salad and want some variety from lettuce.

  • 1 Cucumber diced
  • 1 tomato diced
  • 1/2 red onion sliced
  • 1 tbsp oregano
  • salt & pepper to taste
  • 1/4 Greek olive oil
  • 1 tbsp lemon juice

Place all the diced vegetables in your serving bowl.  Meanwhile, combine the spices and oil and juice in another bowl.  Mix well.

About 15 minutes before serving, top the vegetables with the dressing.  Mix well and serve.  Enjoy!
