Day One of eating less meat. As you know, the kids have gone off to college. When it comes to eating, this is an opportunity. An opportunity for me to reevaluate what I eat and move to a healthier diet. For me, for now, it means I want to eat more vegetarian meals. I do not intend to abstain from meat, just to reduce how often I eat meat. I plan to eat more fish and a lot more fruit and vegetables. This recipe is a start and a simple start on my new path. Sorry boys. When you come home, you will subjected to, or should I say, a beneficiary of a healthier lifestyle.
- 1 – 12 oz package of ripe grape tomatoes
- 3 tablespoons olive oil
- 1/2 red onion, finely chopped
- 1 tbsp of garlic in oil
- 1 tbsp ground thyme
- 1 tbsp ground oregano
- 1 tsp red chili flakes
- 1 tsp sugar
- 1 pound dried angel hair pasta
- 1/4 cup grated parmesan
- 1/4 cup chiffanade basil
Heat a large saute pan over medium high heat. Add the olive oil and warm. When the oil is hot, add the onions and garlic and saute for 2 minutes.
Add the spices, herbs and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly letting the flavors merge.
Cook the pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce.
Add the Parmesan and basil and toss well. Enjoy!
