I write this post as I sit in my Las Vegas hotel room. Been a full and rewarding day at the ICSC conference (retail real estate). Modern technology is so cool when it works. I took the pictures over the weekend and write the post while I take a quick rest before dinner at Nobu. I hear it is amazing. Have any of you eaten at Nobu? What did you think.
As you have read previously, I through together a meal last Friday night with a Greek theme for the kids. The main course was Greek marinated chicken and lamb. I used a traditional marinate that would work well for each type of meat. If I had more prep time, the meat would be marinated for hours or even overnight.
- 3 boneless, skinless chicken breasts
- 1/2 cup of olive oil
- 4 – fresh sprigs of rosemary and thyme
- 1 tbsp oregano (I could not find fresh in the store)
- zest and juice of 2 limes
Combine the ingredients in a bowl or bag and drop in the chicken. Massage the marinate into the chicken and let soak for as long as you have, and in my case, about an hour.
Turn on your outdoor grill to medium. Place the chicken on the grill and cook on each side for 5 – 7 minutes. Move to the upper shelf and finishing cooking for another 10 minutes. Let the chicken rest before serving. Enjoy!
